Neighborhood, 2021 Red Wine Blend 'Blood Moon'
Our 'Blood Moon' is a red wine blend made using a fermentation technique called carbonic maceration, where whole-cluster grapes are placed in an anaerobic (no oxygen) environment. After 2 days, the grapes start fermenting on their own. The grapes ferment undisturbed, without any maceration, stirring and punch-downs, which makes this wine fruiter with softer tannins and perfumed aromatics. After 10-14 days, the fermenting grapes were drained and pressed into 50% neutral French oak barrels and 50% stainless steel barrels, where the wine concludes its fermentation and barrel-ages in individual lots for 90 days before final blending at time of bottling. The juice is fermented using only native, natural yeast alive in the air and on the grapes. Nothing is added throughout the wine's elevage, resulting in a wine that is rich and complex with strong primary fruit flavors and acid, and remains unfined and unfiltered.
Ruby-red and sparkling with milky, iridescent haze in the glass. Extremely drinkable, exchanging body and tannin for perfumed aromatics, juicy fruit flavors and stunning acidity. Eclectic fruit cocktail flavors collide with a rustic grapiness and rose oil. Partial stem inclusion in the fermentation contributes a dried lime leaf flavor.
