Neighborhood, 2021 Orange Wine Blend 'Dawn'
Our ‘Dawn’ is a skin-contact orange wine made from white wine grapes that spend extra time extracting color and flavor from their skins. Sourced from entirely sustainably farmed vineyards, including our estate vineyard (Pali Vineyard), the unique flavors of this blend are the product of three distinct fermentation styles. One of our Pinot Grigio lots is fermented carbonically, using whole-cluster grapes that are pressed into neutral French oak barrels two thirds of the way through their fermentation. The second Pinot Grigio lot is de-stemmed and fermented at temperature below 88°F on skins, before its pressed and aged in neutral French oak barrels. Lastly, our Chardonnay lot is directly pressed into neutral French oak barrels and fermented at temperature below 68°F, and self-topped via gravity. Components of all three lots are blended together before bottling, aged for 90 days using a combination of 50% neutral French Oak and 50% stainless steel.
The juice is fermented using only native, natural yeast alive in the air and on the grapes. Nothing is added throughout the wine's elevage, resulting in a wine that is rich and complex with strong primary fruit flavors and acid, and remains unfined and unfiltered. Hazy and bright orange, mouthwatering acid is balanced with a smooth, almost syrupy palate that has a surprising weightless quality, offering dried mango, candied orange zest, and sea-salt alongside a lush and perfumed fruitiness and minerality including grapefruit, kumquat, fruit cake, wet stone, and spun honey with dried tea leaf and rose petal.
