2019 Estate Natural Chardonnay
We picked the Chardonnay grapes for this wine on the chilly, early morning of October 2nd, 2019, from Pali Vineyard in the Sta. Rita Hills AVA. The clusters were sorted and pressed that morning, and the juice went through a spontaneous fermentation facilitated by only native yeast alive in the air and on the grapes. The grapes were punched down by hand multiple times daily during fermentation. No sulfur was added throughout the wine's elevage. Less than 20PPM was added prior to bottling. This Chardonnay was barrel-aged for 6 months in entirely neutral French oak barrels.
