Inspired by the great dessert wines of Alois Kracher, Tim Perr made The Central at his winery off of Central Avenue in Lompoc. The Central is a dessert Chardonnay made to last and to linger over. Just two tons of Chardonnay were harvested the week of Thanksgiving 2008 from the Sierra Madre Vineyad in the Santa Maria Valley. The fuit arrived to the winery at 38 brix and was gently pressed over an 8-hour period to extract deep-yello, thick, syrup-like juice. The juice was fremented to 11.5% ABV, leaving 18% redisidual sugar. This "Homage-to-Kracher" has a regal nose of nutmeg laced with citrus. Bountiful aromas of apricot, orange, and honey are augmented with hints of spice. It's viscous on the palate with a tangy, bright acidity, which complements the sweetness with a balanced, luscious finish.
